ok guys check out my sig rig i'm looking to run maxed out at 4k with aa and everything will my platform hold back the 2 gtx 1080s all that much or i will i be fine ?!
i didn't receive the second 1080 yet, i know 4k will run fin on 2 gtx 1080s but my concern here is if my cpu is a good match for those gpus at 4k resolutions or will the bottle neck negate the sli benefit
It shouldn't be too terrible... 4K is still going to be tough for your GPUs, so I would think that you will still be more GPU limited than CPU limited in the most demanding games (unlikely to be pushing enough FPS to become CPU limited most of the time, depending on the game).
However, I would make a platform upgrade your very next thing (more cores!)

move over to the clock for clock part, it is kind of surprising my 3770k vs the 7700k is just a little slower and they are gaming at 1080p with no AA to highlight the CPU deficit ... didn't expect the difference to be so small
but if you have monitor at 120/144hz or so, you would still need more Powerful cpu & faster RAM, they can definitely help push your framerates further into 120/144FPS perfectly at certain resolution.
this video mentioned it pretty good.
You would even need more RAM also, recommended 16GB, gta5 after long season gameplay it took almost 10GB of RAM.
My personal experience also 16GB has much better experiences while playing heavy games (HITMAN) & alt tab into Browser, with 8GB will make my system out of RAM.

I'm really not surprised, I had a 3770k till I inadvertently fried my motherboard which I couldn't find a decent replacement for, at least for not less than $800 new.
I even had the clock up to 4.9ghz at 1.38v with temperature while running prime for 10 hours with just a few spikes now and then that bumped 85C, average over the 10 hours was 78C.
So if overclocking and its a good chip with watercooling, it can still put up quite a battle with the newer i7's.
Punctured a fan cable with the sharp wire cutoffs on the back of the motherboard. Fan survived, motherboard was dead after that though.
For stability test:
Personally I would suggest 3dmark advanced edition, and run the 3dmark Stress test tool (must pass minimal 97% at least, 20 loops). Every benches/games has different kind of stress loads. Make sure you test on many good games/benches, because in some apps your card can stay stable, but on other heavier apps usually it would probably crashes/artifacts in another day.
Game: try Witcher 3, Metro Redux, Crysis, BF, FarCry, GTA series (on max settings + high resolution as desired & possible)
to verify if bottle necked, you maybe can try to compare your system on many youtube videos that has similar system but better CPU.
i can report that now i'm hitting 60fps locked on all games i have tried and on higher settings than before (maxed) with 4x AA @ 4k except for one game, doom, does it support SLI ?
all in all i could never achieve this with a single card, i always received resuslts in the 40s if i used such settings before with 1 card so maybe i'm not bottlenecked by the cpu after all and this platfrom i'm having is still worthy of a dual pascal setup
