Functional OS without tracking for my needs?

My home was robbed and I lost my PC, so a friend of mine gave me an old laptop from 2011 or so. I've been using it mostly for browsing (texting and reading articles), writing, my photos, video editing and processing, with Puppy Linux. It's slow sometimes, especially when it's anything related to video (it doesn't have one) - can't even play 1080p YouTube videos properly.

Anyway, I miss my Windows, but at the same time I do not want to install it because I know that a) it's gonna be slow as hell, b) it tracks everything, and I hate that idea.

So what OS would you recommend for me in a situation like this?

1) W10 will not be slow on almost any 2011 laptop, give model and specs
2) Windows does not "track everything", don't buy into the hysteria.

Aside from those notes, I don't know which Linux to recommend (because if you think W10 will run slow, then W8, 7 and Vista are WAAAY beyond, and I don't believe you want to go down to XP, so Linux is your only choice, from what you've said), however - stay away from the PCLOS distro, it's horrendous, packed with major bugs, and has compatibility issues with standard software (like Steam for Linux, for example).

If you are after Linux then maybe Manjaro or Fedora but really most nix could work for you.
