yfw their goal was to make people assume they'll do that with the SNES version and sell tons extra and you're stuck with the extras when they don't discontinue it until long after release.

I had almost no interest in the NES Mini. I grew up with those games, they have a certain charm for their simplicity, but I'm glad that era is over.
The SNES on the other hand, to this day the SNES hosts a large majority of the best 2D games ever made.
Arguably, the SNES will never become obsolete.

It's probably still not worth buying a separate box for, I can barely figure out what to do with all my legacy consoles as-is, but you can see the attraction of these things for the millions of people out there now who never experienced that era and aren't normally interested enough in Nintendo to buy their primary hardware offerings.

You're definitely not alone.
After spending half a decade playing the SNES version, Mario Kart 64 just felt wrong, even Toad felt like it handled worse than Bowser from the original.
The tracks in 64 are bigger, but as far as I'm concerned the first game is actually the only "racing game" in the series, the rest are vehicle based party games.
Ironically that's what everyone else did to the hovercar racing games to gain broad success and F-Zero is practically the only arcade racing series that actually stayed a "Racing Game" past the first iteration, which also seems largely responsible for its lack of popularity (whether that be in the minds of the fans or the creators I don't know, but Nintendo hasn't given any hints of revisiting that franchise).

The best racing experience I've had recently is with Forza 6 while driving the Lotus F1 car on the Nurburgring. That never gets boring.
