So I have decided on the core of my build, but I'm pretty confused on the motherboard choice. Ryzen motherboards being pretty new, it's hard to find reviews to gauge the difference for the same price points.

CPU: AMD Ryzen 5 1600X 3.6GHz 6-Core Processor ($319.25 @ shopRBC)
Memory: G.Skill Ripjaws V Series 16GB (2 x 8GB) DDR4-3000 Memory ($154.98 @ DirectCanada)
Video Card: MSI Radeon RX 580 8GB ARMOR OC Video Card ($329.99 @ Memory Express)
Case: NZXT S340 (White) ATX Mid Tower Case ($89.98 @ NCIX)
Total: $894.20
Prices include shipping, taxes, and discounts when available

My first consideration was Gigabyte Gaming K5, but some people said it was too much if I won't be using 2 videocards in the foreseeable future. MSI B350 Tomahawk is a better bargain at 80$ cheaper and I usually run with MSI products. ASRock X370 Killer is middle of the pack pricewise, but has mixed reviews

Would like some formulated opinions. My budget is 250$ CAD, but cheaper = better ram.

If you are not going to OC and just use the boost, then get the MSI one, it's what your comfortable with anyway. There are mixed reviews for the MSI and AsRock ones. Have not seen any reviews for the Gigabyte one.
