Sky Digital (or Zalman as a rebranding) tend to be pretty good with those things, the NMOUSE 4K / M600R have some of the best click latencies out of any mice (the KTM9500+ is still supposedly better though). It wouldn't surprise me if this new mouse was using the same firmware, at least as far as the click latency goes (though pretravel and clicking speed/force can have a fairly big impact).
But with knowing it's 0.8 ms exactly (assuming there's no advertising gimmicks happening and it's verifiably 0.8 ms average latency), we could turn all those relative-click-latency charts to have the actual latency in ms, couldn't we?
Maybe if you buy the G510 you will have to change the cable. G510's cable is better than that of G007 but stiff one.
The reason I do not recommend nkey G007 is because it is impossible to replace it with an Omron switch due to a design flaw in G007.
