I recently got into custom building my pc. So much good money wasted on laptops.
Tweaking with my pc is on top of my list to do now! (Whatever i'm confident with it)
Here is my build:
CPU - i7-7700K (will be delid with Cryonaut and relid)
GPU - Zotac 1080 Amp Extreme! (Idk whether i want to change tmi on this guy too)
Mobo - Asus Maximus IX Code
Memory - Corsair Vengeance Led 32gb - 3200Mhz
SSD - Samsung 960 Pro 1Tb (I need bigger storage XD)
PSU - EVGA Supernova 1000 P2
CPU Cooler - Corsair H110i with two stock fans for push and two Noctua NF-A14 iPPC 3000 for pull in the front of the case
Case cooler - 1 x NF-A12 for intake at bottom
2 x Coolermaster Masterfan Pro 140 Air Flow RGB for exhaust
Case - Fractal design R5 blackedout edition with window.
Monitor - Asus pg27qr (LOVE IT!)
I know i overkilled my build with huge psu and all but im hoping to go sli when gpu price goes down! Or when cybermonday comes!
I think money would be better spent for you on getting 16gb of RAM , a cheaper power supply and a 1080 Ti instead.
If you are coming from a laptop environment to a desktop, you definitely don't need 32gb of RAM from my experience.
You are definitely going to need the extra juice from a single card with 1440p resolution though and the extra VRAM is good too. Just the better trade offs imo. RAM and PSU can be upgraded much easily than a GPU.
Your spending >$600 on a monitor, don't drive it with a $600< GPU.
You don't need a GTX 1080 Ti for 1440p. Where do you get this stuff most games will run just fine at 1440p the only game I cannot cap out at 144hz on my 1440p is Witcher 3 with Hairworks off I am still around 110 FPS. But for games like OW I run epic settings and still 140+ FPS on both my 1700x GTX 1080 FTW 2 and my 6700K GTX 1080 FE w/ EK WB.
A stock 1080Ti will get down to about 60-70fps in Elite: Dangerous, completely maxed out (in-game ultra, plus custom texture/environment resolution) on the surfaces of some planets and in ice rings with asteroid shadows enabled at 1440p.

Nonsense. This is a new build, stop looking at games that have been out and keep future titles in mind as well. Not only that, but there are plenty of titles out already at 1440p w/ ultra settings that would stress a 1080ti. Plus, the extra gpu horsepower translates to the use of more AA, etc. I would run 4x SSAA if I could afford too. No gpu is too powerful.. ever. Even at 1080p, a 1080ti will simply just last you longer.

I had to move some GPUs around and now have a 1080ti connected to my 60fps 1080 screens. It's simultaneously glorious and embarrassing
GPUs advance fast enough IMO there is no benefit in going too far. You could have just split your purchases and gotten more frames for your buck in the long term.
Unless you just want to push extra frames for more inputs or something...But that has obvious diminishing returns.
edit - where relative to GPUs older CPUs keep closer to the peak performance available to consumers*
