I have an i7-7820x and I just ordered the der8auer Delid-Die-Mate X tool in order to delid my processor and replace the thermal paste. I've read that I should remove the stock adhesive and replace it. What should I use to remove it and what should i use to glue it back down?

You really dont need to remove or replace the adhesive. Those steps are for people who want a stock-like cpu.
If you lay your computer down flat, you can place your chip in the socket. Then apply your thermal paste and put your IHS back on the cpu. The cpu socket clamp will hold your ihs down to the chip.
I like this method because if something goes wrong, or you want to replace the TIM later on, you can do so without de liding the cpu again.
