If release is 2 months away, I would wait. It's your money, if you don't mind buying twice, then go ahead.

I would look for a 1000w psu with a midrange system, or 1200w for a HEDT.

Confused.

Most reviews dont cover the minimum frame rates, just high and low. An initial glance puts the i7's on top,especially @ 1080p. When you're entering 4k territory high IPC doesnt matter too much. Do you want higher frames or smoother gameplay? You can always hold off till coffee lake, but its still 6 cores vs 8 cores.

As for M.2 SSD´s you should still care about thermal throttling as that will slow the SSD down
Again i would look into some sort of cooling for an M.2 because IF you are going with SLI the M.2 will have close to no air flow or it and then it will throttling making it slower which make the whole thing completely pointless

Again why pay for something you cant use?
As for which GPU vendor i would look at either Asus or EVGA, the EVGA GTX 1080 TI FTW3 might be for you?

It sounds like 4K@60Hz is op's target, so RyZen and a well clocked 1080 Ti will do with G-Sync to smooth out the frames around 60fps, if op absolutely does not want to wait for official 8700K benchmarks.

True, but you might not be waiting very long. Also if you're going to drop like $1500 on gpus while going with a ~$300 processor that seems a bit mismatched. As for current stuff you might be better of going the Ryzen route or even an i7-7820X.

Ok after doing a fair bit more research I need to make some changes.

Thanks all for your help so far.

1. I am going to go for a single 1080ti. It is now clear to me that SLI support nowadays is very hit and miss, even problematic.
2. I am going to use a normal SATA SSD since every benchmark and review I can find show the NVMe performance is only realised in synthetic file transfer tests or benchmark programs.
3. I will go for a better CPU cooler.

If you are not going with SLI you can drop the PSU down to a 550-650 watt and save a little bit there
Another suggestion is to go with the Seasonic Prime instead as its a little bit better.

As for the CPU cooler if its CLC you want then the Be Quiet Silent Loop is pretty much the best option out there right now
Or you can get a refillable AIO kit from Alphacool EK or Swiftech.

The money saved from losing a GPU could be spent on a better CPU.

How about an i7 7820X. Clock it up a bit obviously.
