PFsense Guru's i require some assistance

So lets go through the check list of things i've done so far

Built a 10G firewall/router with 6 10GBe interfaces and 8 1GBE interfaces (1 for wan), Check!
Compiled the drivers and configure it so it works! Check!
Use a bios mod to access hidden PCIE options to increase PCIE payload to enable full 10GBE to 10GBE wire speed transfers for internal network! CHECK! (I get 1114MB/sec sustained with all interfaces loaded, So 3 PC to 3 PC all get 1114-1200 each depending on specs, So everything is in the clear)
Use a completely overkill processor for it? YEP Xeon X5670 with 12GB Ddr3 attatched to it.

VPN an entire area of my network, Not check, This is the part i want to do now, And i am fairly sure it can be done, Basicly all devices that get a DHCP lease (NOT a static one) I want to have go through a VPN, While i want the static devices to NOT go through the VPN, The reason why i want the pfsense box to process it is because VPN clients tend to occasionally interfere with internal network traffic and there is almost always a lot of internal network traffic, So does anyone have a suggestion on how to do that?

Build my own steam cache server, Despite having 400/400 i think it would still be cool to have my own cache server as a sort of project and for lan parties.

Get Plex to stop screwing with me, all the ports required are openned and directed to the static host for it yet it still says it's unavailable to the web except for 5 minutes after i hit "Check for availability"

Simple, create a Site2Site VPN though either IPsec or OpenVPN then configure the routing for the network interface to go via the vpn interface through iptables / routing
