I recommend not swapping out your CPU and motherboard as it's not really an upgrade. If you want to purchase all the other parts for your current system, go for it.
As said already dont bother with the CPU and motherboard as its not an upgrade
The M.2 SSD is not an upgrade either if you are going to use it for gaming, its going to be held back by software limitations which means its not going to faster then an old SATA AHCI SSD

Drop it and use the same amount to get a bigger SATA SSD instead
You could also consider a better CPU cooler as the one you have is not all that great

Edit: as for the monitor you got the Asus PG279Q or the Acer Predator XB271HU you looked at

A dual tower air cooler would be better but its not going to be huge amounts of better so you might not even need to bother
As for Iiyama i dont know them so i cant say anything about them, if you are looking for a gaming monitor the Asus PG279Q is a good option

Just be aware that some of them have issues with backlight bleed
I was lucky to get one that has almost no backlight bleed issues

ok then...what a about that option to upgrade my system:

RAM: Trident Z RGB Series, DDR4-3000, CL 14 - 32 GB Quad-Kit https://www.caseking.de/en/detail/index/sArticle/47688

Hard Drive: Samsung SSD 850 Pro 256GB SATA 6Gb/s in RAID with old one??

Graphics: GeForce GTX 1080 Ti Gaming X Trio, 11264 MB GDDR5X or GeForce GTX 1080 Ti FTW3 12 Gbps Elite, 11264 MB GDDR5 - white

Monitor:

1- Predator XB271HUA, 68,58 cm (27 Zoll), 165 Hz, G-SYNC, TN - DP
2- Predator XB272, 68,58 cm (27 Zoll), 240Hz, G-SYNC, TN - DP
3- ASUS XG27VQ, 68,58 cm (27 Zoll), 144Hz, FreeSync, VA -DP
4- ASUS PG278QR, 68,58 cm (27 Zoll), 165Hz, TN, G-SYNC - HDMI, DP

As for the monitors, I have to investigate what to buy

otherwise this makes sense to upgrade....

Dont buy a monitor with a TN panel unless like your colors to be washed out and too bright
And why is the Asus PG279Q not on the list?

Edit: its the Acer Predator XB271HU not the XB271HUA you want
The A version is with a TN panel

If you're not currently limited by RAM, buying more RAM is effectively throwing money away. I don't know how much performance you expect to gain with a RAID SSD setup, but you would only see the difference in benchmarks.

Of course it will fit. You just need to decide where you want to mount the radiator.
