New to OC, any idea on AVX settings, and other non-Vcore stuff on the i5-8600k? BIOS Screenshots provided

I'm having trouble changing my AVX, theres a big seperation of the "-" symbol from AVX and Auto, and I seem to be restricted in what I type in the Auto field, such as 7 or 14, are these -7 and -14? I've seen many say AVX -2, but I am not able to set this :/

Anything else I should be adjusting in my push to 5 Ghz? I've read not setting up AVX can lower the CPU's life.

Yes for AVX offset it is negative values, so if you type in 2 it's -2. Not using an AVX clock offset will not hurt anything, it just makes the cpu run slower when AVX instructions are used which may make it run cooler or more stable.
What board do you have btw?

Aorus Ultra Gaming MBU. My other issue is I cannot seem to type anything in the AVX other then -7 or -14. Seems a bit strange? :/

Try using the +/- keys on your keyboard. Gigabyte's bios' have a bit left to be desired, sometimes it's good and sometimes it's a pain.

Anything else you could tell me by chance based on my settings when pushing to 5ghz? Like other voltages to adjust other then Vcore? Would appreciate any extra feedback

I am not very familiar with coffee lake cpu's unfortunately but I can tell you for a basic overclock you only really need to mess around with are VCore & VCCIO. VCore for the Core frequency and VCCIO for the Uncore frequency.

For starters I'd say 1.3V to 1.35V VCore and 1.15V VCCIO would be a good starting point to try for 5GHz Core and 4.5GHz or so Uncore I think.

Though it looks like temperatures are going to be the biggest problem, 80c is about as high as I would recommend going under load, past that and it will become more unstable. Your cooler is not bad but the TIM under the IHS of the CPU is going to be limiting your overclocking capabilities.
I recommend delidding the CPU if you don't mind voiding the warranty and replace the on die TIM with a liquid metal paste. You can learn more here: http://www.overclock.net/t/1313179/official-delidded-club-guide/0_100

Yeah I think this Cooler is a big problem for me, the heatsink doesnt look leveled, and was very hard to place, I'll go back to an AIO, which I previously used on my Auto-Clocks.
