Both places will tell you basically anything you'll need to know for GUI. It's really quite easy.
As far as a problem, have you ever done the Towers of Hanoi? I personally HATE recursion, but it's an interesting entry-level problem. Also, is there any thing you do on a regular basis that would be much easier if you had a program for it? For the majority of my assignments, I'll just write a program that can do the work for me, and by the time I'm done the program it took half the time of the work and I have an even better understanding of the material. If you can find a way to code something that'll make your life easier, do that for your project.
