Other than being an insane overclocker and cheap, why is the 165 better than the opty 185? I mean, they're both dual core and the 185 is basically an FX-60 with locked multi's, right?

Well, the 165 can reach the same clocks as the 185, but it's much cheaper. So if you take price/quality into consideration, the 165 is better (when you OC of course).

Don't feel too bad. I paid $255 for an OEM version about a year ago. The only consolation I have is that I got lucky and received one of the most revered steppings: the CCBBE 0610, which has the highest success rate of hitting 3GHz. I still have yet to reach that milestone, but I'm actually more afraid of my motherboard dying as opposed to the chip itself, lol.

You've got a good mobo. Why would you be afraid of it dying?
