At the grub screen during boot-up (or by editing /boot/grub/menu.list), hit 'e' to edit your normal selection. You should see a few lines, and at the end of one of them should be... 'quiet splash' or something very similar. If you remove these it will give you the output during boot-up, and might even fix it for you.

Remove the quiet and splash portions to make it boot up with out those options.

Some of the stuff in mine will be a little different than yours, only change the quiet and splash parts.

The worst this will do will give us a little more output to see what is going on.

IMO, it seems like fsck is finishing but whatever is after it isn't starting, probably something with the splash. It would be worth it to try doing a fsck sometime else, via the live-disk or something, as you shouldn't run fsck on a mounted running disk.

Also, when it hangs doing the filesystem check you can hit CTRL-ALT-F1 to put you into a prompt.

One more thing. How long did you wait for it to do the check? Unless they changed it, it only does the check every 30 mounts, so it won't do it very much anyways. A couple hours would be more than enough... mine usually only takes a few minutes.
