This probably sound noobish..but how can i tell if one of my cores are dying?!?!?

what makes you think they are dying?

You could run Orthos and see if both cores go to 100% and process the tests at roughly the same speed. If that happens then it should be safe to assume both cores are fine

I hardly doubt that one core is dying however if it truly is

Run two instances of Prime 95 @ stock speeds

If one fails you know there is something wrong.
