it is set at manual at 800 (in the bios) but in grey it says 785 actual after restart. When I bump it up from 800 through 809 one at a time it still says 785, but once I hit 810, it says 810 actual

ok so I'm at 3000mhz, with temps at 49, 50 at idle, 64, 64 under load. The ambient temperature is 25. I originally had vcore at auto, then set to 1.3000. Currently it's at 1.27500. Roughly how much further do you guys think I could go?

thats a bit hot. you dont want it over 60C at any time.

Ideally you don't want it going over 55 c, so 64 is way way too hot to be honest.

As MGX1016 was saying though, lowering vcore helps with the temperature. So how much lower could I go with the vcore?

Lower the vcore one notch in your bios, and test. 15 minutes of orthos, or however you prefer to test it. If it passes, test again. Keep going until you're either satisfied with the temps or until it's unstable, and you have to notch up again.

What programs do you guys use for reading temperatures?

core temp read my cores 44,47 Idle
speedfan reads them 30,33 Idle

Also what's the normal difference in temperature between the cores and T_Case?

that's way too hot imo. My e6600 3.4ghz dle temp is 38-42 but that it's with higher than normal ambient temps. ambient temps around 30c and higher. Just make sure you have adequate airflow. did you use good thermal paste?
