I've been researching the components for a new system I plan on getting and then water-cooling, I’ve got a few questions regarding the CPU and RAM if someone doesn’t mind helping me with them

CPU:
I was thinking of going for an Intel E6700 over their eXtreme series of processors that Intel makes as I’ve read they’re overpriced and you can easily overclock the E6700 to match the performance. I’m only interesting in Dual Core (Core 2) not Quad as most applications/games don’t even make use of 2 processors at the same time.
But I’ve seen E6750’s and E6850’s for sale from some online stores, what are these? There’s no listing for them on Intel’s site. They’re also considerably cheaper that the E6700 but the model number would seem that they’re more powerful?

Memory:
What I’ve found so far is there seems to be 3 options, DDR1 DDR2 DDR3, in the corsair range the higher the DDR type the lower the latencies are but the RAM MHz also becomes a lot faster, 1333MHz for the DDR3. From what I’ve read about overclocking, getting your RAM FSB to match your CPU’s FSB? is very important. So, should I be looking at DDR 1, 2 or 3? I’d like it to be stable with the overclocked CPU possibly also overclockable RAM itself. The DDR1 has the lowest latencies but the slowest frequency etc.
Fooling around with my work PC, E6420 CPU, DDR2 800MHz RAM I’ve found that its only stable overclocked from 2.13MHz(stock) to 2.4MHz, any higher than that I need to drop the speed of the RAM down to 667 or 533MHz, I upped the RAM voltage to 2v but the sticks seemed to get a bit too hot for my liking so I dropped them back down to 1.84v(stock).
I’d like to avoid that issue with my own system, I need some RAM that’ll cope with the overclocked E6700(if I get that model).
Oh I'm after 4Gb, 4x1gb or 2x2Gb are also in the mix of options.

Motherboard:
Has to be Intel's XBX2 as i've already got a watercooling kit and heatsinks on my XBX1 that i'd like to take across.

Any advice is much appreciated.

Well I believe that the bad axes (xbx) use DDR2. You will have to look at your board requirements to be sure. here is an often recommended memory here on OCN http://www.newegg.com/Product/Produc...82E16820231065 it is one of the best known OCer's available.

The Crucial Ballistix DDR2 is really good stuff too.
