What to get to complete my new rig?

Hi there, i've been reading a lot of info.. and i mean "a lot" about what to buy and getting the best -bang for the buck-.
I'm considering spending 'bout $1000, so this is what i got until now:

cpu: e6600 http://www.newegg.com/Product/Produc...82E16819115003
mobo: GIGABYTE GA-P35-DS3R http://www.newegg.com/Product/Produc...82E16813128050
mem: OCZ Platinum Revision 2 2GB http://www.newegg.com/Product/Produc...82E16820227139
cpu cooling: zalman cnps9500 http://www.newegg.com/Product/Produc...82E16835118223
hdd: Western Digital Caviar SE16 WD2500KS 250GB 7200 RPM SATA 3.0Gb/s Hard Drive - OEM http://www.newegg.com/Product/Produc...82E16822144701

I'll probably buy an LG 19' (locally). So my gaming res will be max 1280x1024.
What i'm asking is if i'll be better with a 8800gts 640Mb over the 320Mb, of course, buying stock speed and OC'ing myself.
I know 320Mb are just fine for that resolution, but some games require 512 for ultra settings, and latter dx10 games may need huge amounts of vram, so maybe 320 wont cut it.

depends how you want to play it...

if you want to spend big now, in the hopes that later you won't have to you could try the 640, and go from there.

I'd get the 320 now get it from eVGA and then if you decide in the next 3 months that you need more power, they have a step-up program and you could go up to the 640 for just the price difference, or better yet, the GTX or GTU.
