What about if you had 2x8600GTS in SLI overclocked and maybe a vmod and good cooling? Would that beat your cards? With DX10 to boot friend.

SLI effectively increases your systems capacity to hanlde more pixels, not make the same number of pixels better. The virtue lies in situations where the limiting factor is pixel count. For example if you were gaming on a pair of1920x1080 HD screens then clearly SLI would do wonders; however if you are gaming on a 1280x1024 screen then the single 8800GTS would do wonders. the single 8800gts would make it look far prettier than a pair of 7series cards, but the pair of 7series cards would probably have a serious advantage in high res environments. Effectively the 8800gts would provide a greater quality of eye candy but the pair would provide a greater quantity of inferior eye candy. It really comes down to your monitor set up.
