Anybody know how fast I could get my E6600 overclocked with stock cooling?

That depends on a lot of factors. You'll be limited by the heat factor; but V-core, ambient temps, case cooling, and the chip stepping are all things that could effect this.

On average, I'd say ~3.0GHz, but that's just a potshot guess at best. The only to know is try and find out.

at most I would guess while keeping it under 60* would be 3.2Ghz.
much past that and your going to start running warm if you cna make it that far.

youd be better off to drop the multiplier and raise the fsb, you may be able to get a decent clock

Yep, the basic limiting factor for you is going to be staying under 60C when running Orthos, OCCT, or Prime 95 stress tests (all available in the "Downloads" section here at OCN). I'd use Coretemp 0.95 to monitor your temps. It's recommended by The Duke (admin) and works really great, I use it as well.

PS: Have you thought about getting an aftermarket cooler at all? The Arctic Cooling Freezer 64 is a great cooler for only $25, and will perform way better than the stock Intel one will. Just a suggestion.
