It allows access to BIOS options that the manufacture didn't provide in the factory BIOS.

You can also replace old amd or intel ahci and raid drivers in many bioses. I have succesfully modded my Asus M488td-M Evo bios from old amd ahci 3.0.5 from before 2009 to the current 3.1.1.0 from 2012 (seen in a amd 990 fx sabertooth bios). For amd bios there is this mmtool. The other thing you can do is to enable hidden feature and patch the slic table to enable Windows oem installation. I've never did this but updateing my ahci driver seems to solve many problems.
