They probably set it all high, watch it lag and still take screens, and as for the smooth gameplay, there's hax that squeeze the frames closer together as well. When editing the video.

the computers they use operate in different ways. For example, i visited an aero space center at university of Toronto last semester and one of the guys was explaining to me that for their flight simulation aircraft, they have a gpu for each monitor on the simulator in which the gpu contained 4 cores. There was about 10 different screens to proportion the distance from flying in a aircraft.

yea but you cant render a game that wont run? its like baking without ingredients. They have resources far superior then an average upscaled computer.

You can test games at 3 fps. It isn't hard.
Just max the settings and see if everything (visually) works.
When you want to test the AI, you turn down the graphics so it now becomes "playable".
Remember, when a game runs under 30 fps or w/e it is still working properly, just not displaying as many fps.
