Depends on your usage. If your system doesn't use more than 2GB, then obviously the extra RAM is pointless. Most systems right now don't go above 2GB in usage, but future programs probably will. 3GB would better future proof your system, but by the time you needed 3GB, 2x2GB sets will probably be dirt cheap. If you can get a quality set of 2x512MB for cheap then go for it, otherwise it's probably just a waste of money.
EDIT: That 2x512MB set you linked to will not work well with Crucial Ballistix. All 4 DIMMs have to run at the same voltage. The A Data wants 1.8v, and the Ballistix wants 2.2v. Running A Data at 2.2 would kill it quickly, and you might have to underclock the Ballistix to get it to run at 1.8v. Honestly, 4 DIMMs are more of a hassle than they're worth IMO. I vote get a cheap set of 2x1GB DDR2 800 (like the Ballistix for $35 after MIR) and overclock them well
