Thermal cutout,voltage spikes,several things really.
If you have it enabled in your bios it will cut power to the machine to save it from frying.

When did the reboot happen? was it random or under load?

Unless you have a bad chip or a rubbish board nearly every Q6600 will run fine at 3ghz just by setting your FSB to 1333. You usually wont even need to change the volts.

Its only beyond that where you need to be alot more hands on with the tweaking.

There is probably something wrong, you just haven't noticed.

There are plenty of things that can make your computer reset. What are load temps?

Run Prime 95. A single instance of this program will run 4 threads (stress all 4 cores). Run the "Small FFT's" test - this will bring out your highest temps, partially because it utilizes so much L2 Cache.

Be warned. I have a Q6600 G0, and a few minutes into Small FFT's send my temps up ~25C. (In my case, from ~35C to ~60C). Run it little longer and the temps may go up a few degrees more, but usually not much in my case. I have pretty decent case cooling though, IMO.

The Thermal Spec on a Q6600 G0 is 71C. Don't it go above this.

PS: If you can't run Prime 95 for at least 8 hours without errors, your system isn't stable. Some say 24 hours.
