so you all are saying at current games, anything over a 8800GTS G92 would be overkill and not noticeable? I want to future proof as much as possible, so even If new games come out I want to be able to play them at high settings.

If you want future proofing, buy an NVidia board and two 8800GTs. The HD3870x2 is only a viable card at 2560x1600.

Since I have an x38 board, would it be worth for me to get a single HD3870 now, and if i find I want more power to get a second one, or even later in the future to trifire it with an x2?

well, like I said, I only have an x38 Crossfire board, so an ATI card would be nice to "future proof" a little more, besides, I could get a single HD3870 and see if it handles my games well, if not, then I can invest in a second one to get better performance. Suggestions?
