What does SLI enabled mean? I've seen the term thrown around and I am not exactly sure what it refers to.

SLI is the use of 2 like graphics cards at once to render a single screen. there's development in using even more cards at once (Tri-SLI is right around the corner).

requirements are a motherboard with 2 or more PCIx 16x slots and an NVIDIA chipset supporting SLI (Nforce 4 supports if it is designated SLI version, Nforce 5-series and beyond all support it)

SLI-enabled implies the video drivers are set to recognize and utilize both cards. if you've seen SLI-certified, it is just marketing as you don't need SLI certified ram to run in SLI

ATI has a version called Crossfire
