Stream Processors and Bit-interfaces

How much impact on a cards performance do the number of stream processors and the size of the bit-interface have?
For example: Comparing these two cards.
8800 GTX - $290
Mem: 768 mb
Bit-Interface: 384-bit
Stream Processors: 128

SAPPHIRE 100227L Radeon HD 3850 - $195
Mem: 1 Gb
Bit-Interface: 256-bit
Stream Processors: 320

Basically, I'm asking which card is better, and why. As always, your expertise is greatly appreciated.

The 8800GTX is the better card for high resolutions.

The Radeon regardless of it's larger onboard memory will be limited by it's own memory interface.

The GTX will burn the 3850.

It's not all about stream processors and bit interface.
Also, Nvidia and ATI have different architectures such as unified shaders vs pixel and vertex shaders

That's maximum resolution supported. Ie; 2560x1600

Although neither of the cards would manage that resolution that well with decent frames.
