So long as you understand that with the OEM version it can be used with only 1 motherboard. If the motherboard dies or if you changes motherboards, you need a new License (unless you RMA the MoBo for an identical replacement).
This is why OEM is cheaper than Retail. I only buy retail for myself, since I never know when I will change stuff.
For builds I do for other people, I give them the option. They usualy go for OEM.

Yes it is true some of the non-oem versions have both 32 and 64bit edition.

Like here on Amazon.com

"PLEASE NOTE: Both the 32-bit DVD-ROM and 64-bit DVD-ROM are included. "

On what version you should get that's a personal preference. Here are the diffferences between the versions.

Differences
Haha thanks! Me and dad bag out Dr.Phil so much . Dad thinks that he's really a shoe salesman that just happened to wander onto a TV set one day .

And yeah thanks for all the info guys, i'm pretty sure i'll buy a retail version sometime this week, as yeah i'll most likely be swapping mobos etc in the not too distand future. Umm is there a limit on installs with the retail version? That's one thing that confuses me.

no limit on the amount of times you can install but you must only have it installed on one computer at a time

I have Ultimate and tbh theres not much difference between that and home premium, the only reason I have it is because my dad subscibes to technet. Yes SP1 is a series of updates, some people have had problems with it that I know but I havent.
