A Linux will do the same without a problem.
You will need 2GB Ram up to 4 to do this.

A Linux server can load much more daemons, but here the problem is that the apps are graphical .. but i'm sure Linux will handle it.

I would think that the main bottleneck is the HDD, not the CPU.

Probably, but no one said "Hah! OSX can do this and no other computer running any other OS can!"

They simply showed a screenshot of x number of apps open and used an Exposé effect/command to organize all the open windows.
