I like 8GB myself (it's on its way ), but 4GB should be plenty.

The reason 2GB and x64 don't go well together is that 64-bit programs use more memory. Many of the variables in a 64-bit program are twice as big, so it can use up to 20% more memory than a 32-bit program. Thus 2GB on 64-bit is less room than you would think.

If you had to, 2GB would work, but at the current prices, 4GB is the sweet spot.

2x1GB will work just fine, but as others have mentioned 2x2GB is so cheap you might as well get it. The cheapest you can get a respectable 2x1GB kit for is $29 after a $25 MIR. The equivalent 2x2GB (in terms of overclockability) kit costs about $100. So there are some savings if you go with a 2x1GB kit. However there's plenty of 2x2GB kits going for about $70-80 that wouldn't overclock as well as the 2x1GB kit for $29, but they're still good. There's perks to both options, it's up to you to decide.

Apparently even the 64-bit Vista has the memory hole between 3-4GB though, so don't expect to be able to use all 4GB of physical memory. However, any memory added past 4GB will be fully utilized.
