for a single card, probably a 3870X2
Otherwise, SLI'd 8800GTs would be your best bet I would think.

He has a 8800 GTS (G80) 640MB, not the new 512MB version.

Get another 8800GTS 640mb for SLI

And upgrade your cooling

And as well a 4gb kit

nah, i think the G80 SLIs aren't worth it.
Anotehr possibility is SLI'd 9600GTs plus a new HSF, maybe a TRUE.

SLi 8800GT, or if you can find 2 8800GTS 512MB G92s for around $200.

If you don't have an dual PCIe MoBo, then get a HD3870X2.

Yea PCI-E 2.0 is backwards compatible, your current PSU should be fine.
