you'd be surprise at what hardware is compatible with OSX, basically all the Intel chipsets since 975X are mac compatible, all the core 2 cpu's are ok as well

gigabyte mobos are the easiest to get running, as the important features like sound and internet work straight out of the box, asus mobos usually need the audio patched, nearly all the pci-e video cards work

the rig in my sig works perfect with OSX 10.5.2, i even pulled out a firewire card from my old ibm thinkcentre and OSX is reading it, though i haven't fully tested it as i don't have a firewire device

as for amd, i don't really know much about but i do know that there is a Live OSX DVD floating around that ran on a 3200+ amd system
