Yeah, if you have no budget for the very expensive DDR3 memory then don't go for that board. Currently you can get 4GB of G.Skill DDR2-1000 memory for $90 at NewEgg. 4GB of Mushkin DDR2-800 is $80. Excellent deals.

You don't have too, unless you must have sli. Evga makes decent 750i and 780i motherboards, however they don't usually OC as well as the intel boards (especially the quads). Since you are not OC'ing then it shouldn't be a problem.

Well, right now, SLI isn't a concern. But, possibly in the future I may decide to get another card... so... I'm not sure exactly what to do.

edit to add: that IF I may decide to experiment with OCing... I should look elsewhere for a board.

Well if you want to may be experiment with overclocking and don't really need sli right now, you should check out the DFI B.I. P35 motherboard, its pretty cheap close to $100, and has a lot of OCing features that a lot of boards don't have. Your ram is fine, there will really be no way to tell if its the weak link in your overclock until you try to overclock.
