What is "show kernal times"?

I just finally discovered how many people have the red line in the CPU useage graphs (yay me). But what exactly is it monitoring? I don't understand it.

Basically, how much processor time the OS is using, as opposed to programs.

If you're mucking around with that kind of stuff, you'll find Process Explorer v11.13 more informative.
