I think I'll stay with 2x 300GB SATA 10k RPM (RAID 0) for performance and 1x 1TB 7.2k RPM for storage now.

Here's another problem:
middle slot is PCI-E 1.0 but the other two are 2.0.

I definitely want 2.0 for my GX2's

For water, I'd go custom. Kits generally aren't as good as a custom solution.

To jump back a page, good 15k SAS drives are leaps and bounds ahead of what a VR will be, and if you really want the best of the best yeah thats the way to go. But the way I see it, SAS controller+2 15k SAS drives = $1600. That same $1600 could also buy an SATA controller + 4 VRs. And 4VRs will outperform 2 SAS drives! So I'd say only go SAS if money literally is no object.

As far as water cooling goes, yeah build your own thing. Personally I like the EK blocks for CPU and video cards, the thermochill PA 120.3 rads, and swiftech mcp655 pump. And of course, go for 1/2" ID tubing.
