It really depends on what you're going to do with it. Obviously if you run it stock, the stock HS&F are fine. If you are going for max OC with good temps the previous suggestions are good, you could also consider the Thermalright IFX-14, if you have room for it.

I wish my custom water cooling kit only cost $200.

I think a lapped TRUE is a great choice for a quad. You just have to pair it with a high CFM fan.

With the 780i chipset I'd probably get a downdraft cooler to help keep the northbridge temperature in check. The Thermalright SI-128 SE is great with a decent fan, but the new Noctua NH-C12P also looks promising.
