Why?

The effects of using 3/8" or 10/8mm is minimal on temperatures, maybe a couple of degrees max.

Biggest commonly used perhaps. But 3/4 isn't unheard of. Ira-k has a picture of a stinger V8 with the 3/4 barbs. It's called MOAB (mother of all barbs) .

I was talking about 3/8" and 10/8mm barbs + tubing, in response to the comment you should only ever use 1/2".

I fail to see what the point in 3/4" is

There really is no point in 3/4 IMO either, but this is OCN, most of us are certifiable anyways.

Well, in the case of Ira-K's stinger, the barbs are NPT (national pipe thread) so you don't have to worry about that particular restriction, simply because the thread can be made considerably larger (by fstfrddy of course).
