evga 680i or 780i???

Ok, I'm a noob to this forum....
building a new rig(first one in years)
I'm on a tight budget at the moment.(but will have more money in a few months)

I need to get the system running asap(can upgrade stuff later), but i want to pick the right board.

after reading about different mobo's i decided to go with an evga(I read they have less nvidia problems than the asus, while still having good overclock abilities)..

I will be using a e8400(may upgrade later to quad core when prices come down) that I will be overclocking like mad...

I will be using a single nvidia-based card(will be upgrading later) and want to eventually either dual or 3-way SLI(not sure if 3-way is worth it). AS you probably already know there is about a $50 difference. I have read that the 780i is well, buggy and unstable(or in other cases stable, but just a pain to setup)

I am totally lost between which one to get.

it is also worth noting, I will be doing gaming, some developing, and my daily online school work(THIS IS IMPORANT, and why i am concerned about it being stable) I also want to run linux on the system.

So, I figured this is probably the right place to ask for some help.

I thought about the 790i, but i can't afford 2gb of ddr3...... I need to get the machine up and running for school and such...., and i've read about the major video-corruption problems with the whole nforce 700 chipset... This is the part that worries me...

if I go with the 780i(ddr2 variety) or the 680i, I can get 2 GB for like $40, with the ability to go from 800mhz to 1066mhz(and the ram will still be cheaper)...
