what are the advantages of running 2?

One larger is better for you I think.
Do you have RAID on your motherboard? What is your motherboard?

Wikipedia can explain a bit - http://en.wikipedia.org/wiki/RAID

You basically have two hard drives that share the data in stripes. This can give increased performance. However, there is an increased risk of data loss, because you have 2 hard drives to potentially fail rather than two.
There are different varieties of RAID, but RAID 0 is the version that gives greater performance. You can do RAID 0 on that mobo.

Be aware if you have RAID 0 on two 160gb hard drives, the total space available would only be 160gb, not 320gb.

Yeah, you would see 320gb then. Or if you did 2x500gb you would see 500gb.

Raid means Redundant Array of Indepentant Disks

get 2 250gb HHd and set them up in raid 0 ( 0 being the mode) and viola you have a single 500gb HHD that is nearlly twice as fast as its indevidual HHD's

P.s this is done by splitting or "stripping" the data between the 2 disks and reading it back from them at the same time effectivly doubling the read/write speeds.
