Need new ram?

I need new ram ....currently my memory is running in single channel mode...what kind of performance increase would i expect to see with a dual channel kit and at 1066 mhz?
Thinking about 2x 1gb sticks of gskill or dominator

I remember reading somewhere that dual channel mode only really helps a few very select programs, probably math intensive things like benchmarks. You'll see more of an increase just from switching to 1066mhz (or staying at 800 and dropping timings) and adding more ram than going into dual channel mode.
Unfortunately you're on a 32bit OS, so you can't benefit from going to 4gb.
That said, go for a set of g.skill, I'm sure you can squeeze some more performance out of them by dropping to 800mhz and lower the timings to some really good settings.

Two sticks of 1066 dual channel will increase your system's stability by a lot. You'll know the difference when you run games. You'll not lag or anything. 2GB ram is recommended for most current games. 4GB is for supreme graphics. 1GB is on the lower end these days.
