If you want one of those boards I'd say the P5K-E and the OCZ ram (I'd recommend G.Skill if you can get it though). If you want to go SLI in the future I'd suggest the Evga 750i over the Asus P5n-d.

Crucial ram has been having a lot of failure recently, and if I recall correctly Corsair ram isn't too fantastic either.

Edit: You may want to look into the e7200

ok your build looks solid but i dont recomend spending the extra cash on a cpu. An overclocked E2180 will perform almost the same as a E6850. Aside from gaming not many applications need the extra cache.

Okay, that seems to be the build I'm going for. Sound good?

I seen some benchmarks and the E2180 seems really good for overclocking and price. But in the long run, would the E2180 be better than the E6550 or E6750 since they'll be able to overclock as well and have a larger cache.

In the long run, the E6550 & E6750 are going to be better. You aren't juicing them as much to OC and you should get a longer life out of them. I think you should get cheaper RAM.

should be a nice rig once you get it done... the BFG 8800 GT's are very nice cards, also very overclockable (see sig) i was blown away by the price/performance of the beast

I agree with conductor609 that mobo and ram should work fine. The E7200 will oc great but you need a better cooler than the freezer7 try to find a Xigmatek 1283 is a 120mm tower similar to a true or tuniq tower.
