I currenty have 1 8800GTS. I'm upgrading my monitor I feel its time to go with a dual card setup. Do you think I should sell my 8800GTS and buy 2 9800GTX+s or just add one more 8800GTS?

well it really depends on how much $ your willing to spend...but with the choices you put... buy 2*9800GTX's.

Adding another 8800GTS will cost me around $150. Two 98000GTX+ will cost me $300. Is worth double the cost?

Just go with another GTS. No sense in wasting money. You'll still get great performance with sli GTS's.

Thats true, but the GTX+s have advantages of their own. They are 55nm so they use less power. Also, the 9 series cards scale better in SLI compared to 8 series.
