These are all safe right?
Safe and then some. i run my q66 at 3 and its only at 1.22 volts on vcore and NB SB HT all auto and very stable.
ram is overvolted to 2.2 though

You get more bandwidth when overclocking your RAM, basically, you'll be able to compute things a little bit faster. Overclocking individual components of a computer will yield small benefits, overclocking all of them will give you quite the performance boost.

I have 2 8800gt's that came superclocked. I've of course got my processor OC to 3.0, would it be worth doing the ram too?

What is the stock speed for your RAM? I'm talking about what the manufacturer says is stock, not what your board offically supports.
