Is it okay to all of the sudden remove one stick of memory?

My system is overclocked right now and and I was just wondering if I would have to revert my overclock back to default clocks. I want to try only one stick of RAM instead of two.

As long as the PC isn't ON... you can pull the RAM and leave the OC settings.
