You can do this with any "Pro" OS, Including XP Pro. You just gotta go to your Add/Remove Programs, select "Add/Remove Windows Components", and select "Internet Information Services", and install the SMTP server. You should be able to get to all your settings through Administrative Tools (in Control Panel).
If you're planning on running your domain on your server (mybusiness.com or whatever), you'll also have to run as a domain controller, which is a little bit more complicated. Otherwise, you can rent a server elsewhere (probably easier, but will incur a monthly fee) and point your computer to it. In that case, you'll most likely get e-mail setup with it, and you won't even need to install your own SMTP server.
