Advice on HTPC

Hey everyone. I'm at my Grandma's house for the summer and in her living room she has: FiOS STB, HDTV, 5.1System, and a VCR/DVD-Recorder. The way she has everything wired, the STB connects connects to the DVD-Player and the DVD-Player sends the video to the TV and the sound to the 5.1System. Today my family watched the movie "Why Did I Get Married?" and when they were done they turned everything off. About 30 minutes later I came in the living room to watch the BET Awards 08 and when I turned the DVD-Player on, it turned itself off in 10 seconds! I retried turning it on about 10 times, unplugged it, checked the connections. And turned the surge off and on, etc.

I did get it to work for about 20 minutes then it started all over again. So what I wanted to know was, can a HTPC replace the VCR/DVD-Recorder? The TV has HDMI In so I can plug that up for the video to the TV and I'm sure the 780G comes with a Coaxil out for the 5.1System. But I'm uncertain of a TV Tuner that can support HD channels in and SD channels in from the FiOS STB. Also I have an idea of what will be OK for a HTPC that will just play movies, watch TV, record TV occasionally, and browse the web.

I was thinking:
64 LE-1600 2.2Ghz
Sony DVD-Burner w/Lightscribe (Hope it works in Ubuntu)
WD 320GB 7.2k
Foxconn 780G HDMI mATX
diNovo Edge Keyboard
SABRENT 65-In 1 Card Reader (For digital camera)
A-DATA (2X 512MB) DDR2-800
Athenatech HTPC Case 200W

Again this will only be used for watching TV, recording a little bit of shows, downloading A LOT!, and browsing the web. Can anyone recommend me a TV-Tuner that's simple for my Grandma to use and can I pull all of this off with Ubuntu (Saving money, she's going through tough financial times right now)?

Edit: If the TV Tuner comes with a remote, can she just use that instead of buying an expensive Keyboard?

Well I can get the 270W version of that case but do you know of a TV-Tuner that fits my needs and if I need to buy that expensive keyboard? Also can all this work with Ubuntu?

Just get the tuner and remote separately. A MCE type remote+sensor is only $25. The issue is finding Linux compatible software for the remote.

The remote can only do basic controls. You still probably want a keyboard since you plan to browse the web and download. Just get a cheaper standard wireless keyboard+mouse. Here are some cheaper alternative HTPC keyboards:

for a HTPC you want something quiet, which typically means spending a little more.

Most tv tuner cards come with a remote, but you'll still want a wireless keyboard/mouse. You can cheat a little with the range by getting a USB extension and placing the sensor closer to your seating position.
