Interesting that the settings refuse to stick - are you sure you're properly saving the settings before leaving the BIOS? If yes, try setting everything else back to stock just to ensure that there is not instability somewhere else causing the board to reset itself.

It reset it self when it fails to boot, but i doubt thats the reason.
