Are there any glaring problems with my system? I'm hoping to overclock mildly and get some good performance for the price.

I'm no Intel expert, but it looks fine, though the ACFreezer7 is outdone by heatsinks like the TRUE and TT120.
I just received my 2x2GB kit of that RAM today.

I don't know about that psu.
NewEgg says it's 600w
Raidmax says 580w
12v rails 20A + 18A
but no where do you find the total amps

This one is 500w with 34 solid amps and 80%+ in your price range:

I'm also not a fan of Biostar mobos.

Biostar P45 motherboards are supposed to be amazing. Overclocking and quality wise.

I've got the Raidmax PSU, and its rock solid. Voltages never drop by considerable amount under load (measured with a multimeter, not software). It is rated at total +38A (20+18) +12v

Well, that PSU will be fine for a single 4850, then. I'm really not a fan of Biostar, from what I've seen their build quality is lacking. DFI DK has a P45 on the market now, if you're interested, it's on the egg. I have the DK P35 on another machine, and it's fast as lightning, DFI has the most exhaustive options in a BIOS for OC'ing I have ever seen. If you're into that sort of thing, check them out.
