Honestly though, Xbox had Halo, Fable and Ninja Gaiden. No other games to me were worth playing, and no Halo 2 is rubbish.
GameCube I enjoyed Skies of Arcadia Legends, Super Smash Bros. Melee, Metroid Prime, Phantasy Star Online, Gotcha Force and quite a few others..
However I still play my PS2, so as much as I like the GC I say the PS2 was the best.
And as far as that Metal Gear Solid remake goes I hate it because I was an avid player of the original, and the script is slightly off. Mei Ling also has an American accent now..
Edit: I just realised I forgot the Dreamcast, but I don't really include that in that generation for they stopped making it before the PS2 was released..
I'd say it's better than the Xbox and GC though, for the kind of games it has although most of the good games were Japan only.

I wouldn't necessarily say you forgot the Dreamcast, seeing as Skies of Arcadia and PSO definitely came out first on it... then later ported to the GC.
Honestly there were a few more XBOX games worth mentioning, namely the Otogi series, Jet Set Radio Future, Panzer Dragoon Orta, Shenmue 2, Jade Empire, and a few other multi-platform titles like Beyond Good and Evil, Psychonauts, and such.
As an RPG guy I can't really help but say that it's gotta be PS2>GCN>XBox.
Pretty curious what GCN games the op got however, since I started building up quite a collection ever since getting my Wii.
