dell hard drive (seagate) - annoying issue

My brother had a stock dell notebook, which came with XP Home, so I decided to help him out and install Pro on it. For some reason, on boot up, it always had an option to either start XP home or XP pro.. and home wasn't installed any more. So I finally just used the restore partition and restored the disk back to factory. Well he bought a new hard drive, and by God's grace I got a nice toshiba for free, which only needed a hard drive to be fully functional. So I formatted the whole drive this time, restore partition and all, and installed a fresh XP pro. But it's still doing it! I don't understand this at all. It seems like reformatting the whole drive would take care of that. Can anyone explain this or better yet tell me how to fix it? thanks!

That as far as I can tell is something to actually do with the bootup stuff, I run a little dell from time to time and I have a standard bootup screen (The windows screen) and a wierd one that I messed about with, and it asks me on startup to choose one.

The hard drive is in a Toshiba now though.. And when it was still in the dell, this was fixed by just restoring the disk back to XP home.
Do the notebooks maybe record which OS is installed, and then when another one is installed just add it to the list?
